permalink ::: e-mail me ::: July 20, 2008 >> 10:23 AM summer activities ![]() The Summer has been lumbering along. Right now in Kentucky it's very hot and humid. For the last week or so, it seems to have been in the mid 90's (F) and lots of humidity in the air - very sticky. We've had plenty of rain this year, as opposed to last. We're due for another one soon. I thought I'd run through some of the things I've been doing regularly this Summer. You see one of them on the right there - tomatoes. Liz planted this garden and somehow I've sort of adopted these tomato plants. I've put cages around them. I make sure they're tied up, staked up, etc. I take time each day to go out and water the whole garden, along with the tomato plants. I've found myself a little place in the shade of our redbud tree, in that chair on the left, to sit quietly for a little bit while I have the hose set up watering sections of the garden. I try to meditate there - maybe pray a decade of the Rosary here and there. Since we moved into this house, almost 3 years ago, we have wanted to put either a patio or deck in the back but never have gotten around to it. Well, it's finally happening. You can see the progress so far on the left. I'm very excited about it. And no, we can't really "cash" afford it right now, but it'll add value to the house, that's the way I've got to look at it. Listen, it'll add value to my life as well, I'm certain of that. It becomes an outdoor room and will draw us to spend more time out there. Also, we're hospitality people and lately, we haven't done a lot of hospitalitizing. Life has been such that it just hasn't happened like it used to. We want that to change and I believe this will help. It's a huge excuse to invite people over all the time to hang out on the deck. There will be a party very soon - prepare yourself! Fishing is one of my life hobbies. See, even calling it a "hobby" doesn't seem right. It's more than that. It has been woven into the fabric of who I am since I can remember being alive. And I too up that mantle. Lately, it has fallen by the way of life. It's sad. I recently made a point of getting both myself and my Dad out to go fishing. He's more pitiful than me - hasn't been for a long time. So, we took a little trip to Harlan, land of our birth, and fished the old River of both our youths - the Poor Fork of the Cumberland River. It was a good trip. We didn't catch many, too early in the day I think, but it was good to be there, actually fishing. We both remembered what a work-out our kind of fishing is too. I seriously need to make myself do this every week. People who know me, know I love to cook, and that I am pretty good at it. My daughter McKenzie (12) (she's not the only child who has) has taken up this mantle. She loves to cook and has become quite the little chef. That is, in fact, her stated career goal now - to be a chef. We'll see how that works out, but she's got my support. Anyway, we both love Asian food and she's pretty brave when it comes to trying new foods. We have Vietnamese neighbors whom she eats with sometimes. So, we decided, since she now likes it and it's growing on me, to make a batch of our own Kimchi - a Korean fermented cabbage and spices dish. It's basically the staple side-dish/condiment of Korea - they eat it with everything. And we did it! It's not that hard actually, just takes time. So, after 4 days fermenting in a plastic container in the kitchen, we opened it up (wooo hoo! what an odor!) and we now have a very spicy quart of homemade Kimchi. Yes, you can have some if you come over. :)OK, that's it for now. Nobody reads blogs on the weekends anyway for some odd reason, so "see" you on Monday! Peace. I have 3 daughters, which means I'm convinced, that God was somehow preveniently impressed with me. Anyway, I love my girls. One of them is 17 now (will be 18 this year - freakin' me out) and this one, that one up there, turns 16 today. It happens way too fast people.That picture is a good representation of her character actually. Perhaps if I was slightly less moral I'd exploit her natural comic talent to get some money for a monastic community, but oh well. My parents came Saturday and we had a little family "party" for her. Tonight I have been told that only she and I are going to dinner at Sonny's Real Pit Bar-B-Q. So see, she really loves me... and ribs. I love her too, very much and I'm proud that she's my daughter. I have some good kids people. I know deceived parents say these things all the time, but for real, something has gone right here. Happy birthday Meaghan Kathleen. ![]() Saturday night was more fun. My good friend Aaron Klinefelter was in town with his cutie little girl Cloe and so we made plans for them to come to dinner. He figured out that DG and Tiffany Hollums were in Wilmore too for some Asbury stuff and so they got invited too. I've met DG before but we hadn't really spent tons of time together. I made some (very good if I do say so my damn self) Cajun cuisine - Jambalaya and Red Beans & Rice. We ate and ate and talked and laughed and watched Tiffany knit and talked. It was great to have those guys over. I love having people over and cooking for them and just hangin' out. Good stuff. I think DG and I have some kind of vague date to go fly fishing too at some point. permalink ::: e-mail me ::: December 28, 2006 >> 1:00 AM a cooking adventure OK, here's another post to get that last one on down the page a bit. I was corn-fused. Anyhow, tonight was fun. With Conor staying at my parents' for a few days and the two older girls at friends' houses for the night, and Liz working, it was just me and McKenzie. So, we went to the store, did some grocery shopping for necessities plus food for our cooking adventure tonight. She wanted to make hors d'oeuvres - more like tapas, Italian style really. We got some Salami, Provolone cheese, French bread, real Mozzarella cheese, some pizza sauce, and the ingredients for some serious old-school Italian meatballs (ground beef, gr. veal and Italian sausage). The other stuff we already had at home. We made little Salami appetizers with melted Provolone on them, tiny Pizzas, some with Pepperoni and some just cheese, and then made some homemade pasta sauce with diced tomatoes, garlic, onions, herbs, red wine, etc. We made some (the Kenz did the messy mixing - big time fun) really really good meatballs. We mostly followed Rocco's recipe but improvised a little. Yes, they turned out very good. We were impressed with ourselves. We ate the sauce and meatballs as our main entree with some Fettuccine. And of course real Parmagiano cheese on top. We had to have dessert (so she said) so we bought some chocolate chip ice cream and McKenzie put it in Martini glasses for us. ha! Full - yeah, that would describe it. It was a good meal with my baby girl (now 11) and a fun time. technorati tags > cooking, italian food, family :::

It was something new, you know, never know what's going to happen. So this will be my first post in the new format. Wonder how this labels thing will work - hmmm. We shall see. Hopefully Jordon can follow suit soon. He seems to be a little distraught about it. Also, today started my week or so of vacation time over Christmas. I'm off until Jan. 2 and that's a good thing. I need to relax and calm down. I have a difficult time calming down sometimes. Hopefully I can do that during this time. I'm making some homemade tortillas tonight - having tacos and we didn't have any tortillas so I thought I'd make some. Good stuff. I tried a new buttermilk biscuit recipe this morning too and yes, it turned out very well. Thanks Alton Brown.
